Red Lentil, Chilli and Mint Soup
2 t oil
1 sml onion, chopped
1 long red chilli, finely chopped (take out seeds for milder tatse)
2 t finely grated lemon rind
1/2 t ground cumin
1 cup red lentils
4 cups stock
1/4 cup shredded mint
natural yoghurt to serve
Heat oil over medium heat. Add onion, chilli, lemon rind and cumin. Cook
for 2 minutes.
Add lentils and stock. Cook for 8 minutes or until tender.
Stir mint through.
Serve with yoghurt.

Luke and I made this as our first proper eat-in dinner in our new home and it was as always a lovely treat. I am constantly impressed at being able to organise a lovely meal in such a short time.
We had a horrible night last night though. Beyond horrible. Or possibly also funny if you care to see it that way. I boarded his train home after heading along to see the better-than-expected 'Freddy vs Jason' and after multiple track delays we finally got into our station and headed home to pick up the cookbooks before heading out to do our grocery shopping. Then there was a roadblock a few kms from home on the only access road. After taking a lengthy detour we reached another roadblock preventing us from getting home. It could be an hour's delay, the officer told us. So we headed off to the supermarket for some improvised shopping. A couple of obstacles (L unable to track down the desired felafels for his work lunch; me being prevented from bringing ice cream home in case we got caught up grabbing dinner and it becoming inedible as a result) left us in a funk as we headed home... only to find the roadblocks still in place almost 2 hours later.
So we sat. And sat. And waited for them to clear the cars involved in the crash. And then drain the petrol from one car and clear up the oil spilled onto the road. When we got the all clear we headed down the road toward home... only to find we had come out at a different road (it was very dark by this time and with no streetlights and poor signage it was not impossible to do so), and that the access road for home was not in fact blocked, had never been blocked.
We laughed. And then kinda sobbed a little.
